How To Make Easy Coffee Cake Recipe | Cocobroma Kitchen Recipes

Have you been searching for the perfect coffee cake? With a melt-in-your-mouth texture. Then this is your lucky day!!! So here is a recipe for making an easy and delicious coffee cake that you can share with your family and friends.

INGREDIENTS:

- 180g Soften butter, using salted (3/4 cups + 1 tbsp)

- 180g Sugar (3/4cups + 2tbsp)

- 180g All-purpose flour, sifted ( 1 1/2 cups)

- 3 Eggs

- 2 tbsp of Cocobroma coffee (using instant coffee)

- 2 1/2 tbsp of hot water to dissolve coffee

- 1 tsp Brandy (optional)

- 1 1/2 tsp Baking powder

- 1/4 tsp salt

- 1/4 Cup of nuts chopped (can substitute with cashews, almonds)

For Frosting:

- 113g Soften butter (1/2 cup)

- 260g Confectioners sugar(icing sugar) (2 1/8 cups)

- 1 tsp Cocobroma vanilla flavoured coffee

- 11/4 tsp warm water to dissolve coffee

- 2 tsp of Cocoa powder

-Few Coffee beans for decorations

Let's get baking

Preheat the oven to 350 F degree.

Butter and prepare a pan with a baking sheet on the bottom.

Soften the butter using a beater in a bowl.

Beat till light and smooth and then add sugar and beat everything.

Scrape the bowl to combine everything using a spoon.

Add 3 large eggs.

Beat while adding 1 egg at a time.

Beat until well mixed

Add flour 180g

Followed 1 & ½ tbsp baking powder

Add 1/4th tbsp salt

Add 2 tbsp cocobroma coffee in 2 & ½ tbsp water in a different bowl.

With the water dissolve the coffee

Combine well

Pour the coffee mixture into the batter

Add 1tbsp brandy (optional)

Combine well

Take a prepared pan

Transfer batter to the pan

Spread the batter evenly on the pan

Smoothen the top

Tap few times to release the air bubble

Bake for 35 mins

Set aside for 10 mins

Release the edges and keep them on a cooling rack.

Run a spatula around the pan to release it from the pan

Completely cool before frosting

Let’s now make the frosting

Soften the butter — 100g

Beat till light and fluffy using an electric beater

Add sugar — 250g

Followed by 2tbsp coco powder

Add 1 tbsp coffee powder + water mixture

Mix well until light and fluffy

It’s icing time

Separate the cake from the middle using a knife.

Put a thin layer of frosting on one side of the layer.

Add chopped nuts for the crunchy texture.

Keep the second layer on the top, the bottom of the cake facing up in order to get a flat top surface.

Now frost the entire cake.

Use a nozzle to decorate the cake.
